Intimidation can be half the battle of entering the kitchen. Bananas foster is one of those recipes that you think are only served in upscale restaurants by a waiter named Pierre, but they can actually be transferred to your kitchen in your fanciest PJs. Bananas Foster is traditionally made with butter, bananas, brown sugar, rum, and some other fancy spices-but of course if I was going to make this decadent dish, I would put my own little spin on it. Instead of using tons of brown sugar and butter, I opted for agave nectar.
Agave is a sugar substitute with a low glycemic index, making it great for those with diabetes. It is all natural and a great option for those who are gluten free or vegan as well. Agave has a 2:1 ratio compared to sugar when substituted in a recipe, and while it has a few more calories per serving (agave-60 calories versus sugar-45 calories), it is a sweeter product, so you will end up using less agave in a recipe than sugar.
Calorie-Crunching Bananas Foster
1 Banana, sliced
1 T agave nectar
2 tsp. butter (or buttery spread, such as Smart Balance)
1 tsp vanilla (optional)
Heat a small skillet on medium with the butter/butter spread and let it melt.
Pour in agave, vanilla, and sliced bananas and stir until the bananas are caramelized.
This whole recipe takes about 3 minutes, and is a great addition to waffles, pancakes, ice cream, oatmeal, and anything else you could think of really. Let your imagination wander!
